Avocado is the cornerstone of my diet and I would eat it at every meal if I could. Nowadays, the avocado has taken on a near divine status thanks to Instagram and I overheard someone the other day saying that avocado is “overrated”. I do not concur with this at all.
I will come to the avocado’s defence by saying that they contain heart-healthy monounsaturated fatty acids, they can lower cholesterol, and are loaded with antioxidants – plus they are delicious.
You can eat them so many ways and I love coming up with different combinations. Here are four of my recent concoctions.
1. Avocado toast with broccoli, peas and balsamic vinegar
This is a good way to eat broccoli if you are not a massive fan
2. Avocado toast with tomato and cottage cheese
I am such a massive fan of cottage cheese! The lumpier the better (I know, I’m weird). Plus, it is a good source of protein!
3. Avocado toast with sliced egg and cress
You can’t beat the avocado and egg combo. Invest in an egg slicer from IKEA to get these perfect egg slices!
4. Avocado toast with red pepper and feta cheese
Putting pepper on toast is one of the best things I’ve ever learned and one of my all-time favourites is cheese on toast with slices of green pepper on it. It is such a good combination! I think it’s the crunchiness.
